This Festive Drink – The Method

WHere is a simplified interpretation of a drink featured on a new drinks list. This is a party-sized pre-mixed which is packed with tastes associated with festive period, making it excellent for hosting a holiday party. Save the extra syrup to use in breakfast cocktails, desserts, or to mix additional servings of bikinis.

The Bikini Cocktail

Serves 10 people

For the Clementine Cordial (produces 750ml)

300ml newly squeezed clementine juice
200ml fresh lemon juice
500g fine sugar

For the Cocktail (produces 850ml, serving 10)

400ml decent vodka
100ml dry gin
150ml peach liqueur
200ml clementine syrup (as made above)
Whole cranberries, as a garnish
Mandarin essential oil, to finish

Directions

For the Syrup: Put all the items into a pan, bring to a light boil, stirring until the sugar dissolves. Then, remove from the burner allowing it to cool down entirely. Pour into a sterilised bottle, cap it keeping it in the refrigerator, it will last for about a month.

For the Premix: Mix the specified liquids into a big jug, leave to sit for an hour, then filter it best through a fine cloth, to ensure it's perfectly clear.

For serving: Pour 85ml of your premix to a mixing glass filled with ice, and stir lightly for about 60 seconds to cool it down. Filter into an frosted cocktail glass or equivalent, decorate with a few cranberries adding the final touch using a brief mist of the essential oil over the top.
